It’s been a while, but are you ready for more Japanese cooking and bento making? This week I’m featuring the 9th recipe from Makikoh Itoh’s Just Bento cook book, Chicken Kijiyaki Bento. This was an easy bento to make. I skipped making the apple bunnies for some reason. I cannot remember why. I served this for dinner as well, so I made some kale to up the amount of veggies. Sometimes in Japanese cooking it can get a little carb heavy for my taste. I need LOTS of veggies!

1. Brown rice – Slim your waste line and get extra fiber!
2. I didn’t have access to a Japanese style sweet potato, so I just used regular.
3. I added some kale cooked just lightly sautéd with sake, soy sauce and a little olive and sesame oil.
