Last year’s super bowl I decided to make Buffalo Chicken wings and make my own sauce to control the amount of butter and sugar that I taste when eating them out. Once I found out how simple it was to make your own I just could not get enough of homemade Buffalo Chicken Wings. With the 2015 SuperBowl tomorrow I was inspired to finally post my recipe for fresh homemade chicken wings with my secret ingredients for the perfect sauce.
Melita’s Special Buffalo Chicken Wings Sauce Ingredients
- 1/2 cup Earth Balance Butter
- 1/2 cup total of hot sauce (5 Tablespoons Texas Pete, 2 Tablespoons Sirachi Sauce and 1 Tablespoon Tabasco Sauce)
- Kosher salt, freshly ground pepper
- Canola or Avocado Oil for frying
- 3/4 cup cornstarch or arrowroot
- 12 Chicken Wings – drumettes and flats separated and KEEP the tips on!!!
Step One: Clean and prep chicken wings. Salt and pepper them in a bowl off to the side. Getting them to room temp before frying will make sure they cook more evenly.
Step Two: Make Melita’s Special Buffalo Wing Sauce. Mix all the ingredients in a saucepan, and over low heat bring to a simmer, stirring occasionally, and then turn off.
Step Three: Dredge chicken wings in cornstarch and put them on a plate. Heat 2 inches of oil in a large, heavy-bottomed pot over medium heat until a deep-fry thermometer registers 375 degrees F. Working in 2-3 batches fry until golden brown. Timing would be about 10 to 12 minutes per batch while flipping them over to make sure both sides are evenly cooked. Transfer the wings with a slotted spoon to a paper-towel-lined plate.
Step Four: Transfer chicken to a bowl and pour buffalo sauce slowly over the chicken evenly coating them all.
