Of all my easy recipes my salmon greek salad is a family favorite. Healthy recipes that can be made in 30 minutes are a must in every kitchen.
Melita’s Easy Salmon Marinade
- 1 tbsp soy sauce
- 3 fresh cloves of garlic minced
- 1/4 cup of orange juice
- 1 tsp of Spike or Italian herbs
- 2 tbsp olive oil
Marinate the salmon in the fridge for minimum 15 minutes and cook another 15 minutes to make it a nice 30 minute meal. If possible the longer the better.
Grill in a grill pan if you don’t have a grill. Cook on medium heat about 6-8 minutes on each side. I like to get my pan hot on medium high then turn it down to medium after I’ve thrown the salmon on the pan. Use the extra marinade to drizzle on the salmon once you’ve flipped the first side. - Red Leaf Lettuce – Need to save time buy pre-washed
- Grape Tomatoes
- Carrots – Need to save time buy pre-shredded
- Crumbled goat or sheep feta cheese
- Black olives
- Red onions sliced
Serve salmon over greek salad with your favorite greek dressing and presto you have a healthy and easy meal.
